La Socca

The Cours Saleya in the heart of old Nice on a Saturday morning it's 11.30 and people are finishing their shopping and looking for refreshment.
This is supposed to be the best Socca maker in the market but then it's the only one I've ever seen. Socca is made from olive oil and chick pea flour scraped into a large pancake and cooked over charcoal. Hot it has a warm, peppery nuttiness and people walk through the market ripping pieces off because cold it's not so delicious.

This market looks like the near the train station in Nice. I remember eating a lot of food here. But I never tried la Socca. I will have to try it one day.

La socca! Such a delicious nicoise specialty! I actually had some yesterday and do not ever seem to get tired of it! Will definitely give this place a try!
