Fruits Confits

Saturday morning and the market's in full swing. This stall is here all year round and sells fruits glaces and fruits confits. Both are whole fruits preserved in sugar, a process that takes about a month.
You can chop them up to sprinkle over cakes and ice creams or eat them whole as a dessert.
We were given some clementines confits and the taste is a delicious mix of the sweet and sharp and if you bite into one the centre is filled with thick, syrupy juice.

what a delicious shot. The red and green pears! We got those every Christmas when I was a child. clementines must be out of this world. For the adults, my parents would chop up various sugared fruit, (cherries peaches) put hem over vanilla ice cream with some sort of liqeuer drizzled over

Glacé clementines are my favourites for that very reason of sweetness and sharpness.

The only time I ever had candied fruits like these was when my mom put green and red cherries and raisin in her fruit cake recipes. And I hate fruit cakes....except the ones my mom make.

I love Confiserie Florian! I was able to visit there when I was in Nice! I loved the rose preserves; I hope to order some from their website!
